This should be fun and very tasty. Not bad in the nutrition aspect either. First I will tell you how to make your own tahini, then how to make Cold Sesame Noodles using the tahini. Great for picnics and potlucks!


TAHINI

Tahini can be a very personal thing, or it can come off the shelf in a can or jar and you can buy the one that you like.

To really make it your own is a very simple process.

Ingredients:

Sesame Seeds 2 cups
Olive Oil 1/2 cup more or less

Equipment:

Metal roasting or cookie pan
Metal spatula
1/8 cup measurer (coffee measure, or 2 Tablespoons)
Food processor
1 pint canning jar
and an oven

Preheat the oven until it reaches a temperature of 350° to 375° Fahrenheit (180° to 190° Centigrade).

Spread the sesame seeds evenly in the metal pan, should be a thin layer. Place in oven for 5 minutes. Remove, stir well with spatula, taste and return to oven for another 5 minutes.

Take out of oven and repeat process. When you taste you will notice the seeds are starting to roast. Return to the oven for another 5 minutes.

I found that a total of 20 minutes was the flavor that I like, not too dark, but you should not assume that it’s what you like. Aim for golden brown on your first attempt, and remember that there is no substitute for tasting as you go along.

Let the pan sit at room temperature until warm. Place in food processor and run until all the seeds have been chopped. Slowly add the olive oil 1/8 cup at a time until you get the desired consistency that you want. I found that a total of 1/2 cup worked well for me.

Scoop into 1-pint canning jar and cool, or use as is and cool what is left over. You can just spread the tahini on a cracker or bread. If you want to make something more special, scroll on to part 2.

COLD SESAME NOODLES OR SESAME SOBA

Have you always liked the way the Japanese and Chinese make those great noodles? Well, you can make them too.

Ingredients:

Salted water to cook 1 pound of noodles
Noodles 1 lb.

Garlic 5 cloves chopped (2 Tbs)
Ginger fresh 2 tsps chopped
olive oil 1 Tbs
tahini 3/4 to 1 cup
honey 1/4 cup
soy sauce 2 Tbs
walnuts 1/2 cup chopped
red pepper flakes to taste

Equipment:

Large pot to cook noodles
Small pot to make sauce
Pasta server
Measuring cups and spoons
Knife

Boil noodles. When cooked to your desire, drain. Do not rinse, cover to keep warm.

Sauté garlic and ginger in olive oil until the edges are brown. Add tahini and bring to a boil, add honey and soy sauce. Bring back to boil, turn off heat and add nuts and peppers.

Combine well with the warm noodles and serve, or store in refrigerator.
